Beef Empanadas

Rundvlees Empanadas

🛒 Ingredients

  • 500 g ground beef
  • 1 white onion
  • 2 spring onions
  • 100 g pitted green olives
  • 3 eggs
  • 12 empanada discs
  • Spices: salt, pepper, chili powder, cumin, smoked paprika powder, and a pinch of oregano
  • 2 tablespoons tomato paste
  • Oil or beef fat (for frying)

👨🍳 Preparation

  1. Finely chop the white onion and spring onions.
  2. Heat the frying pan with a little oil and sauté the onions. Meanwhile, boil the eggs.
  3. Add the ground meat, season with salt and pepper, and cook until done.
  4. Add chili, cumin, smoked paprika powder, and oregano.
  5. Stir in the tomato paste.
  6. Chop the cooked eggs and add them to the mixture along with the olives.
  7. Remove from heat and add the green part of the spring onions. Let cool.
  8. Fill the dough discs with the mixture.
  9. Reheat oil or fat and fry the empanadas until golden brown.
