Does La Planchetta also work on induction hobs?
Yes! Because it is made of hot-rolled iron, it is suitable for all types of heat sources, including induction, which uses a magnetic field to directly generate heat in the bottom of the pan.
It can also be used on gas, electric, ceramic (glass-ceramic) hobs, grills, or in the oven.
However, be careful with induction hobs: the heat is more concentrated, and at high temperatures, the plate can deform. Therefore, always use a low temperature in that case.
Seasoning La Planchetta before its first use
Steps to follow:
- Clean the entire surface with paper and place it on the burners.
- Heat for 10 minutes on high heat.
- Turn off the heat and wait for the temperature to drop.
- Remove from heat and place in a safe place.
- Apply a few drops of oil and spread it with paper over the entire surface.
- Put La Planchetta back on the heat, warm for a few seconds and rub again with paper.
Which products should NOT be used when cooking on La Planchetta?
It is advisable to avoid using lemon and vinegar while cooking, as these can damage the surface of La Planchetta.
At what temperature is it recommended to cook?
Medium heat or the outer ring of the burner (depending on the dish you are preparing).
How do you clean La Planchetta?
Cleaning La Planchetta is very simple:
- Remove solid food residue.
- Pour one cup of hot water onto it and let it sit for a few minutes.
- Wash with hot water and dish soap.
- You can use a metal spatula or sponge to facilitate cleaning.
- Repeat the process if necessary.
- Thoroughly dry the surface (you can also let it dry on the fire).
- Apply a few drops of oil to both sides and spread with kitchen paper to prevent oxidation.
- Store it lightly oiled.
